Today I am making the family favorite omelette recipe in an Afghani style that will add value to your breakfast table. It's simple, easy and quick! full of nutrition and packed with energy so recommended to have it in the morning to stay productive throughout the day.

As I am an egg lover so always try different styles of egg recipes in my kitchen. This recipe is very close to shakshuka so many people call it Afghan shakshuka. I normally make this on weekend breakfast or holidays.

What is Afghani Eggs?

It's a power-packed egg omelette recipe cooked with onion, potatoes, tomatoes and eggs. Shallow fried diced potatoes cook with chopped onion and tomatoes by adding some salt and peppers. Then add eggs over it to make it in a poached style. Super tasty and prepared in less oil so best for the foodies who are looking for healthy breakfast ideas to try at home kitchen.

Ingredients & Substitutions

  • Eggs - 4
  • Potatoes - 1 Cup (Diced)
  • Onion (Chopped) - 1 medium size
  • Tomatoes - ½ cup
  • Oil - 3 Tsp
  • Salt - ½ Tsp
  • Red Chili Powder - ½ Tsp
  • Black Pepper - ½ Tsp
  • Green Chilies - 1 sliced (Julianne cutting)

How To Make Afghan Breakfast

Dice the Vegetables: Prepare potatoes, onion and eggs in diced cutting.

In a pan, heat up the oil and add diced potatoes to fry. Stir continuously to fry potatoes until it starts to change color. Now add chopped onions and sauté for few minutes on medium heat.

Season with salt, red chili powder, and black pepper powder. Give it a good mix to combine spices with sautéed onions and potatoes.

Add chopped tomatoes and give it a good mix.

Cover for 3 minutes to cook on low heat with steam of tomatoes.

After 3 minutes, pour the eggs over the vegetables.

Cover the pan for 2 minutes to make perfect poached eggs.

After 2 minutes, the Afghani eggs are ready to serve. Garnish with red chilies or green chili with Julienne cut.

Serve hot with your favorite bread.

Tips to Make Perfect Eggs

  1. Shallow fry the diced potatoes until it releases the water.
  2. Yukon Gold Potatoes are best for pan frying and roasting.
  3. Never add salt and pepper before frying the potato and onion otherwise it will clutter and release water.
  4. Add tomatoes with peeled skin.
  5. Never cook eggs on high heat.
  6. Carefully note the timing of poached eggs as per your taste like semi poached or hard eggs.
  7. Serve hot!

How Long to Cook Afghani Omelette?

Initially cook the potato and tomatoes on low heat for about 3 to 4 minutes then add eggs and cook it for about 2 minutes. You can manage different timing to prepare poached eggs here as per your taste. Make sure to cook the eggs on low heat.

  • Half poached eggs - 2 minute
  • Semi poached eggs - 3 minutes
  • Hard eggs - 5 minutes

How to Serve?
