Ingredients

  • ½ head red cabbage, grated
  • 1 bunch cilantro, finely chopped
  • 1 carrot, grated
  • 1 jalapeño pepper, seeded and minced
  • 1 teaspoon minced ginger
  • 2 limes, juiced
  • 2 tablespoons olive oil
  • 7 drops stevia
  • teaspoon celtic sea salt

Instructions

  • Place the cabbage, cilantro, carrot, jalapeño, and ginger in a large bowl

  • Toss veggies with lime, olive oil, and stevia, then sprinkle with salt

  • Serve

    This is a delicious cole slaw and so versatile. The first few times I made it almost as written, but this time my cilantro was moldy! So I used fresh dill and always leave out the sweetener as I’m not crazy about it in savory foods. I love the idea of it on tacos, thank you ladies!
    And thank you Elana! Delicious, and the only way I’ll make it from now on.

    Hi, Elana,
    I was looking for a red cabbage slaw recipe. You’re yummy slaw fit the bill. Because I did
    not have all the ingredients specified, I made a few mods. I used raw organic apple cider vinegar instead of lime juice, cayenne pepper instead of jalapeños, and cooked organic
    beets instead of stevia. The added ginger was divine. I did not have cilantro and decided to add a tiny amount of oregano instead. I am happy to say the changes worked. This is the first time I’ve made your red cabbage slaw. Next time I will use cilantro, jalapeño and limes.
